The Foothills Cuisine® of Blackberry Farm Contributors

This book would truly not have happened without a team. It began with our collective group of gardeners, chefs, cheese maker, editors, bread maker, butcher, and preservationist huddled in our "bunk house" cottage kitchen brainstorming every time, and its associated ingredients, menus, processes, and historical anecodotes. From there a beautiful book came together because of the impressive editorial talents of Marah Stets, Sheri Castle, and Aliza Fogelson. The coordination of this two-year project was held together by the talents of Virginia Switzer and Sarah Chabot. The contribution of stories, recipes, and ideas from Dustin Busby, Jeff Ross, John Coykendall, Michael Sullivan, Krissy Blauvelt, Andy Chabot, Joseph Lenn, Josh Feathers, and Maggie Davidson was the foundation upon which this book was built. At the same level of significance is the incredible photographer, Heather Anne Thomas, whose photographs bring this book to life in a way that makes us all look so good! A special thanks to Angie Mosier, Linda White, and Michael Peterson for their styling efforts. Blackberry Farm is much more than any one owner, writer, chef, or farmer. Rather, a team of artisans defines it. As a whole, we are greater than any one part, and that is truly reflected in this book.

Blackberry Farm continues to be named among the top small hotels in the world in publications ranging from Conde Nast Traveler to Travel + Leisure, which named it the the number one resort in North America in 2011. The late Blackberry Farm proprietor Sam Beall grew up on the property. He worked at the French Laundry, the Ritz-Carlton, Cowgirl Creamery, wineries, farms, and markets before settling his roots in the foothills of Tennessee.

Marah Stets

Marah Stets

Marah Stets is a food writer and editor. She has collaborated on cookbooks with a wide variety of chefs and celebrities, including the famed Golden Door spa and actress and restaurateur Eva Longoria. Marah lives in Washington, DC, area with her family.

Sam Beall

Sam Beall

Before returning to Blackberry Farm, where he was raised, Proprietor Sam Beall attended the California Culinary Academy while apprenticing at a number of wineries, farms and restaurants including the dining room, kitchen and garden of The French Laundry. Over the past decade, Sam and his team have evolved Blackberry’s food and wine program into one of America’s most respected farm-to-table experiences. Along with his wife, Mary Celeste, and their four children, Sam lives and cooks within a stone’s throw of the property’s heirloom gardens, creamery and Relais Gourmand restaurant.
