Black Tea Cake

290g whole milk
1.5 tablespoon black tea
225g demerara
65g butter
100g eggs
65g Vegetable oil
1 teaspoon vanilla extract
175g ap flour
1.5 teaspoon baking powder
.5 teaspoon baking soda
.5 teaspoon kosher salt
8g black tea (assam)
Bring milk to a boil. Remove from the heat and steep tea for 10 minutes. Strain out tea.

Cream together.

Combine and add slowly. Scrape down sides.

Combine all dries and blend in vita prep until tea is in very small specks. Add to creamed mixture in 3 parts with cooled milk from above.

Bake in a buttered and papered 10inch cake pan. Bake at 325F for 15-20 minutes until lightly golden and set.  We serve this cake with Anson Mills Toasted Benne Seed Ice Cream, Milk Jam, and Honey Candy. Serve at home with a drizzle of honey and vanilla ice cream.
