Blackberry Farm Cornbread Muffins with Apple Onion or Strawberry Ramp Jam

We are very proud of our Blackberry Farm Cornbread Mix. Keeping our baking mixes on hand is a great way to always have the time to have fresh baked at home. Cornbread muffins are a nice way to make small sandwiches or treats for a party.

Makes 12 standard muffin sandwiches or 24 mini muffins

1 package Blackberry Farm Cornbread Mix
12 ounces Blackberry Farm Singing Brook Cheese
½ cup Blackberry Farm Apple Onion or Strawberry Ramp Jam

Preheat oven to 425
Prepare a standard 12-cup muffin pan or 2 mini muffin pans by greasing each individual cup with vegetable shortening. Mix up a batch of Blackberry Farm Cornbread Mix according to the package directions. Fill each muffin cup ¾ full and bake until golden brown. Remove from the oven, release each muffin from the pan and allow to cool to room temperature.
Once cool, cut the cornbread muffins in half around the equator of the muffin. Layer 2 or 3 thin slices of Blackberry Farm Singing Brook Cheese on the bottom half of the muffin, top with a dollop of Blackberry Farm Apple Onion or Strawberry Ramp Jam and replace the top of the muffin to create a small sandwich. You can also serve them open-faced by layering cheese and jam on each half of the muffin.
