Blackberry Farm PB&J Sandwich Cookies

Blackberry Farm Peanut Butter is a perfect balance of pure peanut taste and great texture, and it makes a great addition in cookie dough. Blackberry Farm jams and preserves smoothed between two cookies acts as a special treat that’s a nod to our favorite sandwich.

Makes about 4 dozen cookies or 2 dozen sandwich cookies

1 cup Blackberry Farm Peanut Butter
1 cup butter
1 cup white sugar
1 cup light brown sugar
2 eggs
2 ½ cups all purpose flour
½ teaspoon salt
1 teaspoon baking powder
1 ½ teaspoon baking soda

Blackberry Farm jam

With an electric mixer, cream together the peanut butter, butter, white and light brown sugar. Add the eggs and mix until combined.

In a mixing bowl stir the flour, salt, baking powder and baking soda together and then gradually add to the butter mixture stirring just until incorporated together. Chill the dough in the refrigerator for about 1 hour.

Preheat oven to 375° F.

Roll the dough into 1 ½  inch balls and place on baking sheets. Flatten each ball with a fork in a cross-hatch pattern and sprinkle the tops with a pinch of granulated sugar.  Bake for about 10 minutes until cookies start to brown. Remove and cool completely before filling with jam.
