Blackberry Farm Quick Mini Tarts

These tiny tarts are perfect for savory appetizers or sweet bites. You can make the crust from scratch or use your favorite store-bought, ready to roll pie crust. Experiment with different combinations of our preserves, jams and cheeses. We love mixing our Brebis cheese with Smoked Onion or Tomato Jam and garnishing with fresh herbs! Or, put a spoonful of Strawberry Ramp Jam in a tart shell and shave a little Singing Brook Cheese on top. For sweet bites, put a dollop of one of our fruit jams or butters in a shell and top with shaved cheese or pipe a little soft cream cheese on top. Play around with combinations for your next gathering!

Basic Pie Crust:
(Makes enough for 12-15 mini tarts)
1 ½ cup all-purpose flour
¼ teaspoon fine salt
8 tablespoons (1 stick) cold, unsalted butter cut into pieces
4-5 tablespoons cold water

In a large bowl, stir together the flour and salt to combine. Add the butter and with a pastry blender or your fingers, cut the butter into the flour until it produces pea-sized bits. Drizzle 4 tablespoons of cold water over the mixture and blend with your hands until the dough comes together. Add more water if necessary but be careful not to overwork the dough or it will be tough. When it comes together just enough to form a ball, press it into a disk shape, wrap with plastic wrap and refrigerate for at least 30 minutes.

Pre-heat oven to 375 F

Roll out chilled dough and with a 2-inch biscuit (or circle) cutter, cut out disks of dough and press into an ungreased mini muffin pan. Using a fork, poke a few holes in the bottom of each little crust and bake for about 15 minutes, until the crust is golden brown. Remove from the oven, allow to cool and fill with your favorite combination of Blackberry Farm products.
