From Snout to Plate: The art of preserving whole heritage breed pig

Join New Orleans Food & Wine Experience for a Cochon 555 preview tasting with our very own Charcutier, Michael Sullivan, as he hosts a discussion devoted to art of preserving heritage breed pigs. Michael and special guest will share their secrets to making their own charcuteries. A quick lesson on types of cures, how meat is preserved, and what to look for when buying artisan salumi. Discussion topics will include how important is the fat, new vs. old world recipes and does heritage pork always mean tastier? Special guests include Founder of Cochon 555 Brady Lowe, Chef Rick Tramanto / Author of “Scars of a Chef”, released March 2011, and Cochon Co-owner & Executive Chef Stephen Stryjewski. Featured winemakers include Abe Schoener of Scholium Project, Susan Neal of McCrea Cellars, Craig Hedstrom of Elk Cove Vineyards and Jeff Blaum of Chase Cellars. Taste cured meats, sample great wines and join in the conversation!
This experience is a sample of Cochon 555, which takes place the following day on May 28th at The Foundry in New Orleans. Cochon 555 is a one-of-a-kind traveling culinary competition and tasting event – five chefs, five pigs, and five winemakers – to promote sustainable farming of heritage breed pigs.
