Irish Tart

There is nothing like bright fresh citrus during the winter months to conjure thoughts of warmer weather.  Juicy blood oranges, tart grapefruits, and the sweetness of the myer lemons are three of the four main ingredients in the Irish Tart cocktail.  Many different choices of alcohol blend well with these great flavors.  In order to create the perfect match, various choices have been tried and the winner is Irish Whiskey.  It is perfect for cold weather, while it is also a nice choice to transition into Spring with the month of March quickly approaching. Get ready to refresh your palate and dream of warmer days with the Irish Tart.

Irish Tart

1½ ounces of Michael Collins Irish Whiskey
½ ounce of fresh blood orange juice
½ ounce of fresh grapefruit juice
½ ounce of fresh myer lemon juice
Absinthe rinsed glass
¼ ounce spiced local honey syrup
2 dashes of Bitter Truth Orange Bitters
2 dashes of Fee Bros. Whiskey Barrel Aged Bitters


Place a splash of Absinthe in an empty coupe glass and coat the inside.  Then, toss out the remaining Absinthe.  In a mixing tin filled with ice add everything else, and shake until cold.  Strain the cocktail into the chilled coupe glass.
