Le Creuset Kitchen Sessions with Chef Josh Feathers and Roasted Potato and Mountain Ramps

1 ½ lb fingerling or new potatoes, washed and cut into wedges
¼ cup cooking oil
8 oz sliced ramp bulbs
¼ cup whole grain mustard
¼ cup red wine vinegar
½ cup extra virgin olive oil

In a skillet large enough for the potatoes, heat the oil over a medium flame. Carefully add in the potatoes and cook for 2-3 minutes to start the browning process and then place into a 375 degree oven and roast until the potatoes are cooked thru. While the potatoes are roasting, mix together the mustard, vinegar and evoo.

Once cooked, bring the skillet back to the stove top and toss in the ramps and cook for 2 minutes stirring occasionally so the ramps do not burn. Add in the vinegar mixture to the potatoes to coat. Season with kosher salt and black pepper.
