Power Bars

Nut and Fruit Power Bar

2 cups toasted pecans
2 cups toasted walnuts
2 cups toasted whole almonds
2 cups grain and nut cereal
2 cups chopped dried fruit, raisins, apricots, currants, cherries, figs, blueberries (a good mix)
1 cup blackberry farm peanut butter or other all natural coarse peanut butter
1 ¼ cup honey

After toasting the nuts, rough chop and keep them in a warm spot like on top of the stove while the honey warms. Toss in the chopped dried fruit with the nuts. Bring the honey to a simmer in a pot and whisk in the peanut butter. Once the peanut butter is combined, pour this into the bowl with the nuts and fruit and stir until everything is coated and sticky. Very lightly grease a 13X9 pan or something similar in size and press the nut mixture into the pan making in as compact and tight in the pan as possible, you should not be able to see the bottom of the pan at all. Next, set the pan away from the heat and allow it to cool completely for at least an hour. To serve, turn the pan out onto a cutting board and cut into desired shape with a serrated knife. Store at room temperature in an air tight container for 1 week.
