Smoked Onion Dressing

We love the flavor that smoke can impart on not just meat, but vegetables as well. We smoke sweet onions until they are dark and smoky. The natural sugars mix combine with the deep smokiness and when cooked together and mixed with seasoning and a little vinegar, our Smoked Onion Jam becomes a great spread or accompaniment to cheese. Here we have mixed it in with a little of our Mulled Apple Cider vinegar, fresh chives and vegetable oil to create a delicious salad dressing.

Makes about one cup

½ cup cider vinegar
¼ cup vegetable oil
1 teaspoon salt
2 tablespoons Smoked Onion Jam
1 tablespoon fresh chopped chives or parsley

Combine all of the ingredients in a bowl and whisk together rapidly to blend. Alternately, place all of the ingredients in a tightly sealed jar and shake to emulsify. Serve immediately over salad or store sealed, in the refrigerator, for up to two weeks. Make sure to give the jar a good shake before serving.
