Spring Awakenings

Today is the fifth of April and all over our garden and fields, the first vivid greens of spring are beginning to appear. I love viewing a field following a spring shower, when the dampened dark soil makes the perfect background for immerging seedlings.

Looking out over one of our gardens, I see rows of English peas that are up, along with onions, radishes, several varieties of lettuce, aragula, cilantro, and a number of others. In our flower and herb garden, the tulips and early blooming bulbs lend a beautiful touch to the spring atmosphere.

Our chefs are aready making use of the first "greens" of early spring, with many more on the way!
