Toasted Benne Ice Cream

2 qts Half and Half

2/3 cup Toasted Benne, ground in spice grinder

2 cups Demerara

2 cups Yolks
Whisk into to sugar/ benne. Temper into boiled cream.

1 can Dulce de Leche (sweetened condensed milk caramelized in can)

Bring half & half to a simmer. Combine benne, demerara, and yolks and dulce in a bowl and whisk together. Temper the half & half into the yolk mixture. Return to heat and continuously stir until mixture reaches 80C. Remove from heat and strain. Chill and then spin in Ice cream machine.
