Tomato Sandwiches

It’s that time of the year again!

It’s the time you dreamed about back in January when you paused for a second and glanced over at those shiny, plastic and Styrofoam tomatoes from south Florida—the ones with no flavor, that resemble tomatoes in appearance only.
The second that you paused was enough to kindle your imagination, and you began to daydream about those heavenly tomato sandwiches that you enjoyed every day for as long as “real” tomatoes were available during the summer season.
Now, it is tomato season once again, in all of its glory, with so many of the wonderful old varieties to choose from.
In Blackberry Farm’s gardens, we have many varieties in full production, including Cherokee Purple, Pineapple, Gulf State, Oxheart, Bread and Salt, Ceylon, and numerous others in varying shades of red, pink, purple, and yellow.
To me, the tomato sandwich is such an easy gourmet delight, and while there are many variations of tomato sandwiches, my favorite requires sliced “real” tomatoes, mayonnaise, salt, and good bread.
You will need a large plate, or if your tomato is very ripe, you may want to stand over the kitchen sink, as plenty of tomato juice will drip from this sandwich.
