Watermelon Vidalia Onion Salad

Chef Josh Feathers has the perfect summer salad recipe! 

2 lb Compressed Watermelon, in large blocks
1 ripe avocado
1 lb honeydew melon that has been compressed
1 lb cantaloupe that has been compressed
Sel Gris
Cracked Black Pepper
1 cup Feta Cheese Crumbles
In a mixing bowl toss together 1/3 of the honey dew and cantaloupe with 1/3 cup feta cheese and half of the avocado. Season with sea salt, fresh cracked black pepper and a few tablespoons of the basil vinaigrette. Toss in 1 cup of greens. Kale or frisee.  Next slice 1, 4 oz piece of compressed water melon off of a block and lay flat on a chilled plate. Season with sel gris and black pepper on both sides. Next drizzle basil vin over the water melon and place desired portion of the remaining melon salad.

Basil Vinaigrette
1 oz water
         1 1/2 tsp lemon juice
            1 tsp Worcestershire sauce
2 tbl minced shallots
            1/4 cup basil leafs
            1/2 tsp salt
            1/2 tsp black pepper
       1 1/2 cups olive oil
            1/2 cup Champagne vinegar
            1/4 cup granulated white sugar
Whisk all ingredients together in a bowl and set aside. Keep refrigerated for 10 days.
