What ingredient can you not live without?

Garlic (and olive oil!).

If you could only cook with one pan/dish what would it be?
A cast iron skillet

What is your favorite thing to do when not in the kitchen?
I love watching American and International films from the 1920’s-1950’s.

Favorite memory in the kitchen?
Making lunch for Yvon Chouinard, the owner of Patagonia, and his staff in my own kitchen by the fireplace.

What would you be if you were not a Chef?
I think of myself as a cook rather than a chef because I was never formally trained. Before I started Chez Panisse I was a Montessori teacher. I think I could have made a good architect or kitchen designer.
