A person who was once a well kept secret in the region has amassed one of the food nation’s biggest cult followings among chefs, that is if you love smoked bacon or ham. To me, he is simply known as Allan. This man continues to be a humble maker of the best country ham, Tennessee prosciutto and smoked bacon made in the United States. Products with such craftsmanship that 10-15 years ago it would have taken a plane ride across the pond to find anything to compare them to. It is the smokiest bacon and melt-in-your-mouth country ham that a person could want. I dare you to have a BLT in the summertime with this bacon or the sweetest summer melon with the country ham and say that there is something better, because there’s not.   
Give the shop a call and there is a good chance the voice you will hear on the other end of the line will be Allan’s. Just ask and he will provide any facts, wisdom or lore of the product, region and history that can easily fill more than one good size book. It would be hard to believe that he has ever made someone else upset or had someone upset at him, that’s just the kind of guy he is. Allan’s easy going personality has given him as much recognition as the products he makes.

Simply put quality into the job, and let the salt and smoke do the rest.
