1. What ingredient can you not live without?


Salt and olive oil

2. If you could only cook with one pan/dish what would it be?

A large cazuela which is an earthenware pot that is traditional in Spanish cooking. I have a very large one at home and the restaurant where I can make rice dishes, stews and braised dishes. It works great on an open fire as well as in the oven. Cazuelas are also great for the presentation.

3. What is your favorite thing to do when not in the kitchen?

Be in the dining room. Usually most of my off time is spent at someone else’s restaurant dining room eating and getting inspiration or scouring the markets for the next great dish.

4. Favorite childhood memory in the kitchen?

Was standing on a chair watching the sofrito being made for the next dish…the smell, sound and the visuals of hot olive oil cooking the beginning of a meal. I figured out early on that many of the dishes we ate all started the same things, olive oil, onions, garlic and peppers. We do that both in Latin cuisine and Louisiana cooking.
