What ingredient can you not live without? 
Tomatillos—mostly because I can't live without roasted tomatillo salsa!
 
If you could only cook with one pan/dish what would it be?
A 12-inch non-stick pan—a well-made one. It offers the most versatility (and the least amount of cleanup).
 
What is your favorite thing to do when not in the kitchen?
Definitely yoga. I do it every morning, and if I can fit in a class later in the day, all the better.
 
Favorite memory in the kitchen?
Cooking with my daughter Lanie. I'm so attached to those memories that I wrote a book about them!
 
What would you be if you were not a Chef?  
Probably something in the performing arts—live theater and restaurant cooking are more similar than you might think.
