What ingredient can you not live without?
Porcini Powder -  It adds not only magnificent porcini flavor but also has that umami-loaded element “X” which elevates so many dishes.

If you could only cook with one pan/dish what would it be?
My Grandma’s iron skillet.
What is your favorite thing to do when not in the kitchen?
Mushroom hunt, of course!

Favorite memory in the kitchen?   
One autumn I had many of my chef customers out mushroom hunting and we found huge amounts of porcini, matsutake, chanterelles and other fantastically delicious mushrooms.  We all went back to an old barn with an ancient stove, rickety tables and two beaten up old grills.  I looked around and every side of me were some of the greatest chefs in San Francisco in muddy pants, giggling like little girls and cooking up a storm. Champagne was everywhere.  One chef had matsutake wrapped in foil packets puffing up like Jiffy Pop on the wood stove heating the barn.  Another chef was meticulously grilling porcini while yet another sautéed chanterelles while pulling a lobe of fois out of his cooler. Every chef had found treasures in the woods and was cooking them such love that it made me want to cry and laugh all at once.
