What ingredient can you not live without?
Hard to imagine existing without a good quality salt as we use it for almost anything, even desserts! It changes everything, makes things taste "round" and balanced.  It is always a telltale on a young cook by how they season with salt.  One must be thoughtful when seasoning with salt.

If you could only cook with one pan/dish what would it be?
A nice low braising pot with a tight fitting lid.  It must be able to go into the oven and have a thick gauged bottom.  It would be great if it could hold all the pieces from a butchered chicken.

What is your favorite thing to do when not in the kitchen?

If the weather is beautiful, then I want to be outside preferably at or near a beach and even better if I’m on or in the water.  If the weather is not so good, nothing beats getting comfortable with a book.

Favorite memory in the kitchen?

My best kitchen memories are of the friends I've made traveling during my stages, the things I learned, and the insight that happens when experiencing other cultures first hand. One of the many reasons I was interested in cooking as a profession at an early age was the promise of traveling, of seeing the world.

What would you be if you were not a Chef?
A tough question.  It would be easy to say something artistic, of working with my hands as I do now, but at an early age I was fascinated by the sea and of sea animals.  Perhaps a marine biologist of sorts?
