What ingredient can you not live without?
Wild fennel, truffles and sea urchin.

 
If you could only cook with one pan/dish what would it be?
A slow cooked braise where the vegetables and meat are all cooked in the same casserole allowing the flavors to build and resulting with rich complex flavors and an easy cleanup.

 
What is your favorite thing to do when not in the kitchen?
Spend time in the outdoors and with family.

 
Favorite memory in the kitchen?
While working with Charlie Trotter, I was treated to an impromptu tasting menu, still one of the best meals I've ever had. I was probably 18 years old. It was the first time I really tasted so many things - foie gras, truffles, rare wines. It made a lasting impression.

 
What would you be if you were not a Chef?
