El Caballo (The Horse)

This combination cocktail from the Main House is a derby day take on a classic margarita. Combining the best of the mint julep and margarita recipes, this creation from Main House Sommelier Kelly Schmidt is the perfect festive sip for celebrating Cinco de Mayo and the 144th Kentucky Derby.

1.5 oz Maker's Mark (The unofficial, but classic, Kentucky Derby bourbon)
.75 oz Grand Marnier
1 oz Fresh lime juice
.5 oz Mint Simple Syrup
Demerara Sugar
Espelette Pepper Flakes (You can use any red pepper flakes, but these are Kelly's favorite.)

Combine the demerara sugar and espelette pepper flakes, adjusting the ratio to be as spicy or sweet as you prefer. Wet the rim of a rocks glass with a wedge of lime, and dip the glass into your sugar/red pepper mixture. Then, fill glass with bar-cracked ice.

In a shaker, add Maker's Mark, Grand Marnier, lime juice, mint simple syrup and ice. Shake well, and strain into the glass. Add a lime wheel for extra flare.

Mint Simple Syrup
Steep about 15-20 mint leaves, with stems still attached, in one cup of hot water for about 15 minutes. Strain mint leaves out, and add two cups of sugar to the hot water. Stir until the sugar dissolves.
