Tasting Notes

Sour Tom

Tom is the alpha male turkey that lives on the Farm. If you’ve visited, you’ve no doubt seen him spread his feathers and make a call to make sure you know he’s in charge. Really, we all know Tom is harmless, but his attitude is pretty entertaining!

Blackberry Farm Beverage Manager Kelly Schmidt often likes to pick something on the Farm and make a drink inspired by that detail. She has been thinking for a while about creating a drink inspired by Tom and his sometimes-sour disposition. So, introducing to the Main House Fall menu, the Sour Tom!

This whiskey sour drink utilizes a micro batch bourbon created exclusively for Blackberry Farm and Blackberry Mountain by Tom’s Town in Saint Louis – perfect for the Tom drink, right? But don’t worry, you can recreate this recipe at home with your favorite bourbon.

Sour Tom
1.5 oz. Tom’s Town Blackberry Special Edition Bourbon Whiskey
1 oz. lemon juice
1 egg white
1 oz. star anise simple syrup

Dry shake, shake with ice, and then strain into a glass with fresh ice.
Add two dashes of Angostura bitters on top and swirl with stirrer. Garnish with star anise.

To make the star anise simple syrup, steep a cup of star anise in a pint of hot water with a cup of demerara sugar for 30 minutes. Kelly wanted to utilize star anise with this drink because it has a Fall feel without being too heavy on the spice flavor. It’s great for early Fall to ease you into the more potent cinnamon and spice flavors to come!
