Gluten Free Ramp Bread

Gluten Free Ramp Bread
            
2 Cups Rice flour      
1 teaspoon Baking Soda       
1 teaspoon Baking Powder   
1 Tablespoon Salt         
2 Cups Almond milk       
1 teaspoon Rice Vinegar       
1 Tablespoon Chia Seeds      
3 Tablespoons Warm Water      
4 oz Olive oil      
(about ¼ cup) Blackberry Farm Ramp Jam or Ramp Kraut

Soak the chia seeds in the warm water for about 5-10 minutes. Meanwhile, gather your other dry ingredients and stir them together in a medium sized bowl. Combine the liquid ingredients, ramp jam, and the chia seed mixture in another bowl. Stir the wet into the dry until all ingredients are moistened. Pour in to a well-oiled quarter sheet pan or paper lined muffin pans. Bake at 425F for approximately 15-20 minutes or evenly golden brown.
* To enhance the flavor, preheat a cast iron skillet coated with olive oil and pour the batter in the hot pan. This creates a wonderful crust on the bottom.
