Honey Roasted Carrots

The great thing about summer time carrots is most likely you are able to find some that are grown in your specific area by a local farmer. Trust me when I say you have not tasted a carrot until you have tasted one that maybe only minutes or hours from the ground vs weeks. The natural sweetness of the carrots with the honey and fresh thyme are a true summer delight.

2 cups baby carrots, making sure that they are peeled
3 tablespoons olive oil
1 teaspoon minced garlic
 A dash of sherry or red wine vinegar
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 tablespoons Blackberry Farm honey
2 tsp fresh thyme sprigs

Preheat oven to 425 degrees F.

Combine vegetables, oil, garlic, salt and pepper on a baking sheet.

Roast for 20 minutes covered. Remove the cover and stir once, make sure the carrots have begun to soften. Add honey and thyme to pan, tossing to coat
Roast for 20-25 minutes, stirring once. Add honey to pan, tossing to coat

Bake 5-10 minutes longer or until caramelized.
